Good question. I'm thinking a stroller and groceries at most. I used to have a truck, so this is an adjustment.

A sedan will get better mileage than a van.
Put the stroller and groceries in the trunk.
I know it feels odd to be in a plain old sedan if you are used to having something that will hold lots of STUFF but they are designed to do exactly what you want. It will cost less to buy, maintain and operate, if you care about that.
You might also consider the dreaded SUV if you can't give up the hauling junk option. They are a great compromise between car and truck.

I still have it with about 135,000 miles on it and still running great. It is one of the very best cars I have ever owned. I would recommend this model to anyone. The new ones are pricey, of course - it is a Lexus, but they hold their value extremely well. I don't know what your budget is.
I think it is time for a sedan for you.
