It means your getting as close as you can before I am bothered by your actions. It is reference to cutting your finger/toe nails as were the quick is where nail and skin are attached. any more cutting you will also cut skin.

A man interviewed on NPR used the phrased "cutting the salami too thinly to get to work." Did he just make this up? I haven't heard it before and don't see any other references in google.
