Also, pot roast is pretty easy to do in the crockpot. The gravy may take some practice, but you can keep some gravy mix on hand just in case the pan gravy doesn't turn out.

Beef roast - You can use practically any cut of beef. London broil makes a pretty good roast, as it gets very tender from long periods of cooking.
    Onions
    Carrots
    Potatoes
Red wine (for deglazing the pan and flavoring the gravy)
    Extra virgin olive oil
    Flour
Beef stock - you can find jars of condensed beef stock or even canned broth will do just fine
garlic - I put garlic in just about everything

Heat some extra virgin olive oil in a large frying pan on medium/high heat until the oil ripples in the pan. Rub the roast with salt and pepper and sear all sides. Deglaze the pan with red wine and add to crockpot. Cut up onions, carrots, and potatoes and add to crockpot. Place the seared roast on top of the vegetables and add beef broth to cover the vegetables. Cook on low heat for 7 hours or high heat for 4 hours or until meat and vegetables are tender. Approximately one hour before serving, shake a few teaspoons of flour with a cup of milk and add to the pot. Stir gently, so as not to break up the vegetables or meat. Add salt and pepper to taste. Serve with warm rolls or loaf bread. Enjoy!

If it was chicken with the skin on, then I can bet it was pretty nasty. The skin gets all rubbery and ooky... Anyway, I came across a recipe for crockpot pork chops that turned out pretty tasty. I changed the recipe a bit from the original, and you may want to add or omit some things to suit your own personal taste.

Pork chops - I recommend the boneless kind (unless you don't mind boning them yourself at home), otherwise the meat is likely to come away from the bones during cooking and then you have bones floating around in your gravy which is no good.
About 1/2 cup of spicy brown mustard or dijon mustard - You could also use ground mustard seed. Don't substitute yellow mustard or it's going to be yucky.
1/2 cup of white wine - I used sauvignon blanc
One 10.5 oz can of cream of mushroom soup (or you can use a cup of light cream or even sour cream)
One cup of milk (you can shake cornstarch or flour with this to thicken the gravy if you prefer it thicker)
    One medium onion, sliced
A few cloves of garlic, or one teaspoon minced garlic
    A dash of thyme
    Salt and pepper to taste
    **optional**
    Several large potatoes, quartered
    or
Cooked pasta or rice (to serve under pork chops)

Brown the pork chops in oil. Quarter potatoes (optional) and place in crockpot along with onions, garlic, thyme, salt, pepper, and wine. Place In a mixing bowl, combine soup (or cream/sour cream), milk, and mustard. Pour over pork chops. Cook on low heat for 8 hours or high heat for 5 hours.

This is great with pork chops or with chicken. Put meat in the crock pot.

    Add:
    1 cup salsa
1/2 cup plum or hoisin sauce(optional)
    1/2 cup peanut butter
    2 tbsp. lime juice
    2 tbsp. soy sauce
    2 tsp. fresh grated ginger

Cover and cook on low for 8-10 hours. Just before serving sprinkle 1/4 cup peanuts and some cilantro.

1 pack of bacon 1 bag of pinto beans & water & after their tender a dash of salt & pepper to your liking. Or lima beans depending on what kind you like. Cook them for about 6 hours or longer. Super simple

I just throw things I have on hand and like, I don't really follow a recipe. Sometimes I will cook the chicken overnight and it will fall apart..other times I will cook it for a few hours and it stays in tact.

    I love my crock pot.

You wanted simple - so jacket potatoes cook lovely in a slow cooker.
But for me - curry or chilli is still the best food to cook in one.

These I make when I am in a big rush in the morning.

3 lbs. chicken drummies, thawed if frozen
    1-1/4 cups barbecue sauce
    2 Tbsp. chili sauce
    1/4 cup honey
    3 cloves garlic, minced
    dash pepper

Pat the chicken drummies dry with a paper towel and place on broiler pan. Broil 5-6 inches from the heat for 8-10 minutes, turning often, until chicken is browned. Place in 3-4 quart crockpot.
Mix remaining ingredients in a small bowl and pour over drummies. Cover and cook on LOW for 4-5 hours. These can be held for 1 hour after the cooking time on LOW.
