We are honoring several individuals who have passed away. Accepting on their behalf are a widower and a widow who has since remarried. How should we introduce each of these individuals? Thank you.

    "Accepting on Jon Doe's behalf, we welcome his widow, Jane Doe Smith" No other explanation is necessary.

    You shoud discuss this with the widow and widower. In my view it would seem that "Accepting this honor is his widow, Mrs. Jane (new last name)." and "Accepting this honor is her widower, Mr John [surname]." would be fine.
