    Even if you change how you think you are still thinking and so therefore the statement would still stand true. It would only change if you stopped thinking.

    The phrase you've cited (from Descartes) is not true. It's a fallacy which exploits a little sleight-of-hand and gets away with it because of our semantic habits: i.e. we're accustomed to finding it odd to state sentences with no subject. So if Descartes had said what is actually supportable (something like "there are thoughts, so therefore there is existence"), it would sound weird, and nobody would put it on a T-shirt.

    Instead, he said "I think, therefore I am", which isn't logic at all -- he's using the conclusion to prove the premise, it's circular.

    So on to your underlying question: it still contains an embedded presumption that there is a self which is doing the thinking. "You change how you think" implies a subject who is both the thinker and the changer. What if this subject doesn't actually exist? Then the whole question becomes moot. There's nobody to change, and nobody to do the changing. There's just change.
