Saint George was a vastly popular Saint in medieval times, with many attributed miracles. He was of nobility and a dragonslayer, so I guess the perfect candidate that clergy and nobility could agree upon.
There was a holiday declared to his honor in Oxford, 1222, and lateron, end of 14. century, he became the patron saint of England:

Saint George was more or less a Roman soldier, who became a Martyr in Rome when he was executed. During the Crusades, knights brought stories about George (who they held in high honor). King Edward III was really involved in holding knights and chivalrous behavior to a very high standard, proclaimed him to be the patron saint.

I hope this is right. That's the way I heard it, anyway.
