Is 60bucks a good first place prize for a bar pool tournament?

More than adequate, $50 would be fine for first place and nice round number. Will you only pay the winner? In my experience most people in bars are happy to play for beers, t-shirts etc. If you run the bar check with the reps for your suppliers and ask if they have any free promotional stuff you can give out as prizes.

From what I understand, it all depends on how many players there are. You know? Everybody pays say $3.00 to play and that is the pot.

That's about typical. I've gotten $100 before, but it took about 5 hours to get through the field.
