Help answer this question below.

Does anyone have recipe for Scottish pancakes. They are smaller and thicker than the American type. When I was kid a friend's grandma used to make them b/c she was Scottish and they are somewhat different. She usually ate them cold with butter and jam

    I found two recipes for Scottish Pancakes

    ------------------------------------
    #1:
    Ingredients
    4 oz self raising flour
    1/4 teaspoon of salt
    1/2 oz of margarine
    2 oz of sugar
    1 egg (beaten with 4 tablespoons of milk)
    6 drops of fresh lemon juice

    The above makes 12 pancakes

    Mix flour and salt in basin, rub in the margarine. Mix in the sugar. Add the beaten egg, milk and flavouring to make a smooth batter. Bake 2 or 3 at a time by dropping a tablespoon for each scone on to a hot well greased girdle. Bake both sides for 3 minutes.

    Ingredients
    8 oz plain white flour
    2 teaspoons bicarbonate of soda
    Large pinch of salt
    1 tablespoon castor sugar
    2 tablespoons oil
    1 egg
    Milk to mix

    Preparation Method:

    Makes 12 pancakes

    Heat the griddle and grease lightly.

    Sift all the flour and bicarbonate of soda into a bowl. Add in the castor sugar, oil, egg and a little milk. Stir into the flour and add enough milk to make a thick creamy mixture, approximately the consistency of very thick double cream.

    Drop spoonfuls of the mixture onto the hot griddle and cook until they bubble on top. Turn and cook on the other side until golden brown. While cooking the rest of the mixture store the cooked pancakes between a small folded towel. Serve the warm pancakes with butter and preserves.

    Thank you for your question.

    These pancakes are known elsewhere as Scottish or Scots and in Scotland and Ireland as drop-scones, pancakes or girdlecakes. They are known as drop cakes because you drop the batter on the griddle. They are known as pikelets in Australia.
