Either Nosferatu or Night of the Living Dead. Well, they've had colour remakes, but one of these original films put in colour would be awesome, if only for the sake of novelty.
Invasion of the Body Snatchers, the scariest horror movie for me when I was a kid.
Psycho (1960). No it wouldn't be as good in color, as the black and white adds to the mystery, like an old creepy house.
Night of the living dead, that one was actually made in color in the 90's the original is from the 60's and the color one wont ever be nearly as good as the original.

It can't be improved upon by color.
All Horror movies terrify me. I am sure they would be worse in colour.
The Haunting! When the walls breathe, and the banging! Not to mention holding hands all night with a ghost or whatever!

There's something very minimalistic and simple about Nosferatu. The black and white being just one example of this. I think that - in showing everything and with every technology - modern horror has ceased to be as effective in playing into actual human fears. Horror represents an art form that can insinuate, build tension, and tap into the reservoir of the unconscious. Since I am sure there will be many references to classic Hitchcock, I'll do the classic vampire film:

I believe the Tobe Hooper version was released in Black/White and in Color, but I can't find a clear reference. I seem to recall seeing it in black/white originally. It could have been the drugs, but usually they *add* color.
It's about poor folks who kill and butcher their prey using a chainsaw. You might ask, "Gosh, what could be the harm in that?" You need to see the movie to learn the subtle details.
As a general rule, you should avoid sending your kids traipsing through the woods to investigate haunted houses. I can't say any more w/o spoiling the plot.
The movie does have a contemporary ecological motif: Eat what you Kill.

I think the 1979 version is a lot better though, and totally artistic. And they show those creepy corpses at the beginning.
