Why does sugar form cotton candy when spun quickly?

    Heaters near the rim melt the sugar and it is spun out through a myriad of tiny holes where it solidifies in the air and is caught in a large metal ring.

    Sugar doesn't come from cotton candy. . .cotton candy IS sugar. . .so, anything that happens with it is just sugar and air and some people add flavoring.

    So, just imagine, spinning sugar and air together = just like you twirl things, sugar is going to fly off of the strands of sugar. . .
