Just about all of them?
Some notable ones though, The Murders in the Rue Morgue, which is totally a surprise, and an awesome concept. The Tell Tale Heart, which just creeps me out, and The Cask of Amontillado is chilling.
Also, A Descent into the Maelstrom is quite interesting.
As for poems, there's always the classic The Raven, and one of my favourites, The Bells.
I think the best of the horrors is
The Facts in the Case of M. Valdemar
A man about to die is mesmerised . . .
I think that the eeriest of Poe's poems is 'Annabel Lee', an upsetting combination of pre-pubertal eroticism seasoned with romantic morbidity.

My fav is definitely the "Tell tale heart" My eighth graders really get into it and it is not as difficult to understand as some of his other works. I also like the poem "Annabelle Lee"
I can't think of any I dislike. Among the short stories I like "The Cask of Amontillado" and "The Pit and the Pendulum" especially well - very suspenseful and dreadful, meticulously written.
Among the poems I am most fond of "Annabel Lee", "Eulalie", "The Bells" and "Sonnet: To Science".
Not a lot more to say.

The Pit and the Pendulum (this story has more to do with torturing another human being)
The Tell-Tale Heart (short story about the human guilt)
The Black Cat (a short story about strange events happen as a cat dies)
The Mask of Red Death (a short story about a guy that is trying to escape death through many different rooms.)
The Raven (a poem about a mysterious bird that arrives at the door.)
Annabel Lee (a poem that mirrors Poe's actual lover and his life)
The Bells (very beautiful and well written poem about bells)
