Some apps (free one's especially) require internet connection to play them. this is due to the fact that they are sponsored and run commercial spots.
Now on the other hand if that is not it, then it sounds like you have a ver2.0 problem.

What happens when you try and play them? If they wont load onto your iPod then chances are you either dont have the 2.0 update, or have it so the apps wont sync to your iPod.
