  • BANANA SOUR CREAM BREAD INGREDIENTS * 1/4 cup white sugar * 1 teaspoon ground cinnamon * 3/4 cup butter * 3 cups white sugar * 3 eggs * 6 very ripe bananas, mashed * 1 (16 ounce) container sour cream * 2 teaspoons vanilla extract * 2 teaspoons ground cinnamon * 1/2 teaspoon salt * 3 teaspoons baking soda * 4 1/2 cups all-purpose flour * 1 cup chopped walnuts (optional) DIRECTIONS 1. Preheat oven to 300 degrees F (150 degrees C). Grease four 7x3 inch loaf pans. In a small bowl, stir together 1/4 cup white sugar and 1 teaspoon cinnamon. Dust pans lightly with cinnamon and sugar mixture. 2. In a large bowl, cream butter and 3 cups sugar. Mix in eggs, mashed bananas, sour cream, vanilla and cinnamon. Mix in salt, baking soda and flour. Stir in nuts. Divide into prepared pans. 3. Bake for 1 hour, until a toothpick inserted in center comes out clean.

  • Don't forget that you can use the banana peels too! They're used in Punjabi dishes. I've discovered that banana peels are excellent in stir-fries. Just chop them the same way you would any vegetable. After cooking, they have the consistency of fried onions, and taste (unsurprisingly) like fried banana.

Cream brown sugar and 1 cup butter, add eggs 1 at a time; beat well. Add mashed bananas and flour and salt, baking soda along with 1 cup sour cream . Add vanilla and nuts last. 2. Pour batter into 3 - 9 inch pans or a 13 x 9 inch pan. Bake in a preheated 350 degrees F (175 degrees C) oven until cake tests done with a tooth pick, about 30 to 40 minutes for the 9 inch round cakes or about 40 to 50 minutes for the 13 x 9 inch cake.. 3. To make Frosting: Mix 1/2 cup of butter or margarine, 4 cups of confectioners' sugar and 1/4 cup sour cream (more if needed). Add 1 teaspoon vanilla and beat until fluffy. I've made this before, it's delicious!
