The new iPod will update exactly the same as the old iPod.

Every time you plug your iPod into your computer, iTunes and iPod check the contents of the iPod against the contents of your iTunes Library. If they don't match, the music that is not in your iPod will be automatically uploaded to your iPod.

As far as a new version of iTunes is concerned, everytime a newer version becomes available, you will be notified and prompted to download it. Your music library and settings will be automatically be imported.
