Canned food has less carbs. I would suggest feeding the cat more of that. Maybe just mix a spoonful of canned food in with 1/3cup of dry food. This is what my cats diet consists of 3 times a day. Breakfast/lunch/dinner. Your cat will whine...but once his stomach shrinks he'll get over it.

In kittens the only way to tell (due to the male testicles not being dropped yet) is the space between their anus and genitalia. A female has a bigger space or gap between the two. Normally a good inch apart. A male is closer together(less than an inch apart). Hope that helps.

Cats don't respond to hitting. However they DO respond to loud noises. They hate them. The next time he bites yell really loudly NO NO NO NO NO!!!!!!!! or clap your hands while yelling. Eventually she will associate the biting with the loud noise and stop doing it. Trust me...I've got cats.

I'd say out of what you listed go with a rat. They can be trained. They are friendly and cleaner than some of the other rodents you listed. They like to hang out with their owners rather than find an escape route.
