Unless they're dressed in a religious robe (e.g., monks), then they're sleeping.
Before falling asleep, they time how long the trip will take to reach their destination, mentally set the duration, then sleep. Their body-clock wakes them up when it's time. It takes a little practice :).

A neighbor of mine breeds chicken, well, breed as in bring-up the chicks. When they're grown, she sells them. She receives chicks few times a week. She uses a very small plot of land in front of her house to put-up the coop. Every evening she lets the chickens wonder then rounds them up an hour or two later.
So far, no one has complained about smell or droppings since she keeps the coop...
