Sometimes, the ppl even pack up and go home in the middle...

It depends on WHAT you're canning. It's called a Hot water bath to just use a large stock pot w/ lid. Keep in mind, the water has to remain at a steady boil for the allotted time, and the water must be covering the jars the whole time.
A pressure cooker is recommended if you do meats or fish. Get a canning book or check out more online.

Aluminum is a heavy meatal that does not leave the body and is thought to be a contributor to Alzehiemers, other memory problems. I have about one pop in a can per year. Not worth it.
