Because men are imperfect and subject to being deceived.

Doctrine and Covenants 1:38, "What I the Lord have spoken, I have spoken, and I excuse not myself; and though the heavens and the earth pass away, my word shall not pass away, but shall all be fulfilled, whether by mine own voice or by the voice of my servants, it is the same." Last quote from LDS Scriptures not accepted by non-LDS. To prove this scripture false, you must prove that God did not appear to Joseph Smith and call him as a prophet. The best expert on this matter are the two others that Joseph Smith claimed were there. That would be God the Father, and Jesus Christ. Most men or women cannot be considered reliable witnesses. There are a few, though, who witnessed heavenly manifestations with Joseph Smith. See Church History.
Therefore, from these two scriptures, we learn that if God speaks to His Prophets it is as if God, himself was speaking. What God says to His Prophets, He has said, and gives no excuse. Who are we to question God's methods? Is this not God's Church, and not the Church of man? If you truly want the answer to this question, you should not be asking anybody here on Earth, but you should be asking God.
Also, Jesus Christ is in charge of His Church. If there are no prophets on Earth representing Jesus Christ, how can Jesus run His Church. We can obviously see that since there are so many religions, with all of them claiming to preach the truth, that the method of relying on the Spirit telling us the truth doesn't work. After all, isn't Satan a Spirit also? So, how can you discern between the Spirit of God and the Spirit of Satan?
A church that has a prophet at its head follows the same pattern as the Bible. So, since God is the same yesterday, today, and forever, it makes sense that His Church would be led by Apostles and Prophets, especially since Paul taught the Ephesians that Jesus Organized His Church with Apostles, Prophets, and other offices as outlined in Ephesians 4:11-14. Paul also states that Apostles and Prophets are the foundation of the Church. Therefore, the Bible teaches us that Apostles and Prophets are necessary.
At the same time, the existence of so many churches who have no prophetic leadership, who claim to rely on the Spirit to guide their church is testimony that relying on the Spirit alone does not work, and does not bring us to a unity of the faith that Paul talked about in Ephesians 4.
Remember, Paul said that the leadership of the original organization of the Church would bring us to a unity of the faith. Once that organization was lost, unity became a lost goal. When the original organization of Apostles and Prophets were once again restored to the Earth that goal once again became achievable. We can now receive the Word of God through one voice, and not countless number of voices calling "Low here" and "Low there". We can hear God's voice through the voice of His prophet.
