Simply saying, "Because God said so," hardly helps answer the question

We don't need dual action kidneys. If you only have one kidney you function exactly the same as if you have two. Your one kidney is larger than 'normal'. I was born with one kidney and it is just chance that I found out I had one (from a bone scintigram). There were not medical abnormalities to suggest that I only had one.
Not wanting to sound cocky buy I am a very good sportsman competing at a high level and having one kidney has never dragged me down.
The 'reason' you have two kidneys is the same as why you have two testicles...(not two eyes, that is mainly for depth perception). They are not fully protected by the rib cage and are therefore vulnerable to impact. Large impacts cause bad results for kidneys and if both are gone death. People with two kidneys had a better survival rate (talking way back in the past) and were able to pass on that gene. That is why we have two
