Sales tax. Much easier to enforce properly (and cheaper to enforce). As long as there's a provision allowing unprepared food items to be free of tax you have a much more efficient and reliable system that cannot be twisted by lobbying groups or wealthy to their advantage.
Income taxes get so convoluted that anyone who can afford to hire a CPA will increase their take home more than double the upfront cost of that professional. But nothing can help them at the checkout line.

I really like that unprepared food is exempt. Same in Massachusetts. That helps a lot in keeping the sales tax from unduly punishing the poor.
