Help answer this question below.

My dad is making salmon patties, and he remembers when he was younger there use to be a good cheese sauce that was made to put the salmon patties. Anyone have any ideas what he is talking about and a recipe?

    Blue Cheese Sauce:

    * 1/4 cup white wine
    * 1/2 cup heavy cream
    * 3/4 cup blue cheese, crumbled
    Place the white wine into a medium saucepan and reduce by half. Add the heavy cream and allow to reduce.
    Add the blue cheese and whisk until smooth. It will get nice and velvety.
    Serve on top of the salmon.

    Simple Cheese Sauce:
    * 1 cup Milk
    * 1 cup American Cheese, grated
    * 2 tbsp. Butter
    * 2 tbsp. Flour
    * 1/8 tsp. Salt
    In a small saucepan melt butter; remove from heat. Add flour to milk and whisk together. Pour milk into butter and add salt. Cook over low heat until thickened. Add cheese and continue cooking until cheese is melted.
