No, that is just an old joke, In the areas where the best salami comes from, often the only sound you can hear in the heat of the afternoon is a donkey braying. Hence the joke is that the only animals are donkeys and salami, including pepperoni salami, must be made from them. Pepperoni is usually made from beef, but may include other "ordinary" meats such as pork.
