Does cornstarch make a better gravy than flour

    advracer

    well, if you cook the flour in the fat prior to making the gravy, you can get it to darken, which will give the gravy different flavor. (used in cajun cooking, learned that from watching emeril).

    • Flour cooked in fat and used as a thickening agent (such as is used in Cajun and French cooking) is called a roux.
