Can someone race using a car that has automatic transmission?

    Yes, but they then have two chances of winning: Fat and Slim.

    The benefits of manual transmission when racing are invaluable. Unless the automatic is equipped with some sort of artificial intelligence, they will likely come in last place.

    Manual transmission gives much better control of the vehicle. Shifting when you want/need, rather than relying on a computer to determine when to shift based on RPMs is an invaluable ability. Think of it this way... There is a turn coming up. You can see that corner, can the computer? Automatic transmissions may be ok if there race is on one straight, level, windless, and paved track with no other vehicles around.
