    I am assuming you are talking about lemon juice as the ink?? So if you take lemon juice and use it as ink on a piece of paper; In addition to various salts and organic compounds, lemons contain citric acid, ascorbic acid and NADP. Since lemon juice contains 5-8% citric acid, it must be the major species undergoing reaction. When the paper is exposed to heat, the water in the lemon juice is evaporated into the air. The remaining compounds react with the oxygen in the air and turns brown( oxidation) on the paper.

    This can also be done without heat, heat just speeds up the process of oxidation.
