First off, all the gnostic gospels or writings are from the 2nd — 4th century AD thus hundreds of years after the New Testament Gospels were written. Thus what is going to be more accurate a biography of your life written by your brother or sister or by someone at least 200 years after you died. (But probably a lot closer to 300 years later.)
These books were not left out but were never considered to be put in. Just as books about another religion were not included. It wasn't a thought to consider. Think if two thousand years from now some Anthropologist are digging through our ancient libraries (assuming the US is long gone by than) and find the book of Mormon the Koran, the Vedas the Harry Potter series and the Holy Bible. After reading each one they would figure out pretty quickly that none of the books are in agreement with the others. So they would not be put into the other as an updated version, but found to be separated by their concepts and ideas. Even though some spoke of similar individuals one could quickly decipher the conceptional differences and realize they wouldn't be in agreement with the text.
Thus the gnostic writings were way after the gospel writings and they were totally averse to the actual historical writings of the followers of Christ, thus common sense would tell one that they aren't accurate nor evidence of the biblical Jesus. One should consider the gnostic writings are of another Jesus not the one from over 200 years before. That would be a much wiser conclusion to ponder.
