How do you cook eggplant? Does anybody know any good recipes?

    One of my favorite dishes is Mabo-nasu. Stir-fried dish of ground pork-beef mixture with Japanese eggplant (mabo-nasu) in a slightly spicy sauce. It's simple you stir fry the ground pork/beef and sliced eggplant and finish it off with spicy tomato-based sauce (probably available in Chinese section of supermarket). Serve over rice.
