based on that definition, evolution wouldn't be a theory would it? Seeing as it's had a few things debunked and such.

Our understanding of systems as wide and complex as evolution does itself adapt and improve as we get more data, make more observations, and test new hypotheses. What's changed in our understanding is not about evolution happening, but rather about which mechanisms are at play (compare Darwin's ideas with current reasoning about selection and adaptation), about finding or debunking false observations (e.g. Piltdown man), and so what we can prove depends on the evidence.
Science doesn't offer absolute certainty. It's a process by which we, as a group, continually strive to eliminate error in process and hypothesis.
Mostly, though, I commented because the "It's just a theory!" retort keeps being trotted out, based on people assuming a scientific theory is the same as a lay-person "theory", an "Idea that I just made up."
