I'm getting married next year and his parents are footing the bill (the guest list is 85% his side). I'm very close with his mom. What's the best way to acknowledge how much I appreciate them paying for the wedding?

A heartfelt acknowledgment at the reception is the obvious way; Quite often the bride has something to say these days during the speeches - as you are close to your fiancee's family I think a sincere acknowledgment from you to your new in-laws would be charming and quite appropriate.
