Too Much Time On My Hands

It's not specifically a Greek/American difference. It is a difference between the Orthodox and Catholic churches, which do not use the same calendar. Most Greeks are Orthodox Christians, so they follow the calendar of the Orthodox Church. Russians, Syrians, and plenty of other national/ethnic groups that are Orthodox would do the same. On the other hand, most American Christians are either Catholic or Protestant. And if you go back far enough in history, the Protestants mostly split off from the Catholics. So they are using their calendar, which is different from the Orthodox one. Again, this is not just Americans. Most Christians in Latin America or Western Europe (to name some of the many examples) have the same Easter as the Americans.
