I dont think he EATS brains. He just looks at the part of the brain which holds the person's powers and figures out how exactly it works to give that person that ability. Then he implements that power in himself.

Oh, duh... that makes MUCH more sense.
I didn't really understand why he went from a fixer to a brain eater, but he's crazy, so I just went with it... thanx!

I think they do try and imply that he eats the brains to help his crazy persona tho studing it does make more sense with his power.

He doesn't eat them. He pokes around in them, finds the power, and takes it.. Or at least that's what I got from Season 3. I haven't started Season 4 so I not up to date.
