The Bible of course. Concentrate on the New Testament for the younger ones, and gradually show how specific passages in the Old Testament point to Christ.

The Catechism of the Catholic Church serves to guide interpretation of the Bible according to the faith of our fathers, and is indispensible.

To my goddaughter I gave an abbreviated form of the CCC (perhaps Mary J Graham's?), which she found somewhat overwhelming. I managed to find a small booklet that was much briefer, which I believe was based on the penny catechism, distributed by a streetside nun. Your parish ought to have resources or access to resources that you can draw upon.
