To make killer nachos, the best idea is to get grated
Monterey Jack, which is easiest, because it is a blend
and a good blend for nachos. I've used cheddar and
mixed it with provolone, which isn't bad, because
historically Italy is related to Mexico and Spain
because they all speak Romance languages.
Wikipedia wants to join the world, but Im not
buying. So, the cheeses that I would leave out are
Swiss and that American cheese crap, which is
    a product of "food imagineering".

The cooking sites don;t discuss types of real cheese
but Simply Recipes is the best bet to avoid using
    Cheese Whizz
