Pancreatic cancer is most definitely affected by dietary habits.

Maybe so, but im any case the general dietary habits of vegans don't seem to particularly increase risk factors associated with pancreatic cancer.
By the way I'm not a specialist or nutricionist, and far from an authority, so forgive me if I use Wiki for reference here:
"Risk factors for pancreatic cancer may include:
- Diets low in vegetables and fruits
- Diets high in red meat
- Diets high in sugar-sweetened drinks (soft drinks) - risk ratio 1.87. In particular, the common soft drink sweetener fructose has been linked to growth of pancreatic cancer cells.
- Obesity."

"The ACS recommends keeping a healthy weight, and increasing consumption of fruits, vegetables, and whole grains, while decreasing red meat intake, although there is no consistent evidence this will prevent or reduce pancreatic cancer specifically. In 2006, a large prospective cohort study of over 80,000 subjects failed to prove a definite association. The evidence in support of this lies mostly in small case-control studies."

I've read all that and more, but the fundamental quality of any good diet whether vegan or not is eating a diversity of foods. Jobs would sometimes eat only apples or only carrots... this concentrates natural plant chemicals (sterols), minerals, pesticide residues and so forth at levels that might be unsafe. Copper pesticide is allowable for instance even on organic farms, but copper is toxic. "Copper compounds can build up in the soil and in excessive concentrations cause liver, kidney and blood disease."
