What type of ingredients produce a foaming or expanding reaction in foods?

    I usually use ENO to produce an expanding reaction , mainly to batter though. it does the job for me.

    • I'm not sure if this has anything to do with it, but sometimes merengue (whipped egg whites) works for some foods.
