Why isn't the word "cheese" spelt "cheeze"? After all, it's pronounced to rhyme with "freeze" so why not spell it that way?

The letter W is spelled double-u; the plural is double-ues.
Example sentence that has nothing to do with sheep:
When creating a web site remember to answer the question to the five double-ues, who, what, where, when and why.
