    Molasses is a valuable source of iron -- a necessary mineral for the production of red blood cells in the human body. Children without sufficient iron can develop anemia and experience stunted growth. Molasses is a byproduct from the sugar refining process. The cane or beets being refined are pressed three times, and molasses is produced from each pressing. Blackstrap molasses is the byproduct of the third pressing and has 3.5 mg of iron per tablespoon, as opposed to molasses from the first pressing, which has only 0.35 mg. per tablespoon. Organic molasses is produced in all three grades and has equivalent iron levels to non-organic molasses.
