If you distill a pot of normal brewed coffee, I know the resulting liquid will be clear and smell like coffee. But will it retain it's caffeine content and coffee flavor as well?

The distllate will be distilled or pure water unless caffeine forms a constan boiling mixture with water. I cannot remember, I do know that alcohol does. But the residue will contain the contents of the coffee in condensed form.
